Peach and tomato salad with orange blossom and honey dressing

If you were wondering what to make for dinner today : look no further. This tomato and peach salad requires just a few ingredients, is ready in under 10 minutes and is as refreshing as it is delicious! It's fruity, crunchy, tangy and lightly perfumed with orange blossom, totally moorish!

Peach and tomato salad with orange blossom and honey dressing

Serves 4

INGREDIENTS

  • 3 peaches, segmented

  • 150g cherry tomatoes (or chopped vine tomatoes), halved

  • 80g rocket salad leaves

  • 100g crumbled feta (or any other soft cheese)

  • Chopped hazelnuts (or any type of nuts)

Dressing

  • 3 tablespoons olive oil and more to serve

  • 2 tablespoons lemon juice

  • 1 tablespoon honey or more to taste

  • 1 ½ teaspoon orange blossom water

  • Pinch salt

  • Pinch ground black pepper

METHOD

• In a large mixing bowl, add all the dressing ingredients together and stir until smooth.

• When ready to serve, toss the peaches and tomatoes in the dressing. Arrange the rocket salad leaves onto a plate, drizzle with olive oil and sprinkle with salt. Scatter the crumbled feta on top of the rocket. Transfer the peach and tomatoes at the center of the dish on top of the feta. Sprinkle with the chopped nuts and serve immediately.
